Summary: The best of the best, All-Clad Copper Core!!! 2009-12-30
Comment: I too hesitated at the $500.00 price tag on this Dutch Oven. But after my husband, a Mechanical Engineer, read about the way the Dutch oven was constructed he said this pot has the very best of everything and will be amazing to cook with (He was so right!)! He explained to me how each metal in the pot worked, heated and distributed heat. The copper goes up the sides and is not just on the bottom as does the aluminum with the benefit of the durable stainless steel!! The engineering that went into this pot was the very best and the results are the very best!!! I tried the chicken recipe that one of the other reviewers suggested about browning the chicken and then slow roasting it for 3 hours.......O-MY-GOSH was that fantastic!!! I am so excited about this Dutch oven that my mission is now to buy the entire line of the 'All-Clad Copper Core'!! If I could give it 10 stars I would!!! Buy this pot and you'll ditch all of your others!!

Comment: Let me start from the top. $500 is not too much to pay for this item. I did not believe that when I got it as part of a promo. I would cheerfully part with the money to replace it now.
Who wants a Dutch Oven? On stove top, oven, slow cooking, stews, chili, chicken with vegis, pot roast, etc. the product (i.e., the food cooked in this baby) comes out better than I have ever seen. You will start making up new dishes to make further use of its seemingly endless possibilities.
Get one and love it.

Summary: Absolutely the Best Cookware 2009-01-31
Comment: I have owned a set of the All-Clad copper core cookware for several years and it is absolutely the best cookware I have ever bought. Over the years I have purchased a piece of practically every major cookware made but nothing compares to this.
The original Dutch oven is the typical straight-sided model that is larger and therefore heavier. When the new curved-sided model came out I was thrilled. Because of the cost it was hard to justify buying another one but I have not regretted it one minute.
This is truly non-stick cookware without the Teflon or other coating. If you preheat the pan, add oil, let it heat for 5-10 seconds, then add food, nothing sticks! I use the Dutch oven at least once or twice a week and am thrilled I bought it. You can use your stainless utensils without the worry of scratching off a coating or pitting the bottom. It is great and will last me another 20 years.

Comment: I nearly did not purchase this dutch oven because the base is only 10 in. in diameter and I was concerned that browning large items or large quantities would be difficult or time consuming. But there is something magical about this pot. Because of its shape, the interior browning surface is much larger than the exterior base would indicate. It is no problem to brown a 5 pound chicken on top of my stove and then cover it and put it in the oven for slow roasting (300 degrees) a delicious french style roasted chicken. Yes, this pot is terribly expensive, and since I do not have the all-clad short 8 qt. stock pot which has been given top rating as a stainless steel dutch oven by Cooks Illustrated, I could not say that this pot is superior. The stainless steel all-clad short 8 qt. stock pot is much less expensive. However, I am delighted with the shape of this pot and its performance. I treasure every one of my all-clad pots. I specially treasure this one and the incredible slow roasted chicken that comes out of it. All of the all-clad pots I have cook well, and they truly will give you a lifetime of good cooking and easy clean-up. All-clad pots have been my first choice gift for wedding presents for years. I have had Le Creuset and they are also exceptional pots with many loyal users but I personally was unhappy with the weight and the difficulty with cleaning the occasional accidental scorch as well as chipping.

Comment: Most of my collection is All Clad and Le Creuset and this pot is absolutely the best that I have cooked with. It's shape is so elegant, the size is perfect and for it's size it is delicately shaped. It is just a pleasure to use. I rate this an easy 5 stars for it's quality and characteristics, if I put the price factor into it, I would dock it a star because the price is outrageous, I will not tell anyone what it cost.
