Warning re heating milk!,

Instructions recommend heating milk in the pan prior to first use. I wasn't watching and boiled milk over pan. It stuck to the pan like glue and was hard to remove with soaking and scrubbing. Watch the pot when heating the milk!
Since that first cleaning, the pan is amazingly easy to clean, heats very quickly and evenly and makes gorgeous no knead breads. On top of that, the pan is a thing of beauty and not near as heavy as the currently popular enameled pans or my regular cast iron.

I loved this pot but, despite being careful with using and cleaning it, it developed a crack after one month's worth of use.

My wife and I bought the Emile Henry Flame Top 5.5 quart dutch oven to make the Jim Lahey no-knead breads. We had tried making his recipes with other baking equipment and were unable to achieve a dark, crisp crust. Using this pot took care of the problem. We've also used it to make some one-pot dinners. Pot roast, using the Joy of Cooking recipe, came out great. As with the bread, we had this dish using other cookware, but it took a dutch oven with a tight-fitting lid to get it right. We also used it for onion soup, carmelizing onions and leeks in the dutch oven, then adding hot stock. Tasted great, and cleanup was minimal, as nothing sticks to this pot and it cleans up beautifully in the dishwasher.
When the pot first arrived, my wife thought it would be too big and heavy for her to handle, but it has not been a problem. In fact, we chose this dutch oven over cheaper ones because it is half the weight of pots made with cast iron. Since it is so large, we keep it on a...Read more
