In 1896 Joseph Lodge was strolling through the Appalachian Mountains in Tennessee and discovered the perfect place to settle his family and start his cast iron manufacturing company. Still family-owned and run, Lodge is the world's largest and oldest manufacturer of cast iron products. This pan's ribbed bottom makes those appetizing grill marks on meat, seafood, and veggies, as well as keeping meat from sitting in grease. By squaring this pan and flaring its sides, Lodge offers extra cooking room for steaks, fish, burgers, or any food that benefits from stovetop grilling and the caramelized flavor imparted by seared grill marks. The ribs in the pan's bottom not only provide those grill marks, but they also elevate foods so that fat collects between them for low-calorie cooking. Because cast iron is unmatched for retaining heat and distributing it evenly--no hot spots--foods will cook uniformly in the 10-1/2-inch pan. It's heavy, must be seasoned by coating with melted shortening and then baking, and needs to be coated with oil or cooking spray after each use to prevent rust. Cast iron's weight and care puts off some cooks. But, as has been known since the Middle Ages, it permits precision and flavor-retention in cooking, is naturally nonstick when seasoned, and lasts for generations--thereby increasing its value. I received my grill pan for Christmas (per request). It is excellent! I use it both stovetop as well as in the oven.For stovetop applications: I put the pan into the cold oven and preheat it to 500 degrees (try THAT with AllClad). When fully pre-heated I transfer the pan to a large pre-heated stovetop burner set to just under 'high' and place the food in it. Depending upon what I am cooking, I will either do the remaining cooking entirely on the stovetop, or sear the food stovetop, cut the oven temperature back to 350 - 375, and let it finish in the oven (great way to prepare fish - quick searing on each side on stovetop, then into the oven for a few minutes to finish).For steaks, etc. Turning over 3 times instead of once with a one quarter rotation on the second turn provides the nice diamond grill marks.For baking applications:

It's cast iron, so you can run this pan as hot as you dare to sear the flavor in. Makes excellent burgers, with nice grill marks but no burned spots, even done all the way through. Try that with a George Foreman and your burger will be black outside and dryer than the Mojave Desert inside.The square pan provides plenty of room to fry up a few burgers and the hot juices in the bottom are made-to-order for sauteeing a few mushrooms, onions, or peppers to go on top. The handle is fatter than older Lodge designs and quite ergonomic as long as you're wearing an oven mitt. Cleans nicely by boiling a little water in the pan and giving it a quick scrub with a stiff round natural-bristle vegetable brush.ONE MINOR DETAIL - I own the pre-seasoned Lodge Logic version of this pan, which is not currently offered by Amazon. You'll have to season this pan yourself, and I can't vouch for whether it will work as well as the pre-seasoned version.

This would probably be it. although I would really lament not having my french press, too. I love, love, love my grill pan. it really does a great job at searing in moisture, making everything I've cooked on it so good.it's a little rough to clean, yet. you can't exactly throw it in the dishwasher. I am finding, as it seasons more and more, it gets easier to clean.I do find that as I use this, my efforts at searing cloud the whole kitchen with smoke, but I suspect this is entirely a reflection on my cooking abilities, and not, in fact, the spendid grill pan.if you have a family, you're going to want/need two or more of these. it's big, but not big enough to manage more than a couple of breasts/steaks, etc.and try "grilling" corn on this baby sometime. yeah. it's pretty tasty.
