This 8-quart round cocotte is great for making dinners to feed the whole family or for cooking large dishes to divide and freeze. Crafted of enameled cast iron for uniform warming and superior heat retention, the heavyweight cocotte performs best at low to medium temperatures over longer time periods so flavors intensify and foods stay scrumptiously moist. The interior features a black matte finish that is almost indestructible and doesn't need seasoning; rather, the oils produced in cooking seep into the surface pores to create an organic nonstick coating. The rougher matte also browns, braises, and reduces better than a shiny polished glaze. In a clever use of modern technology, the cocotte's tight-fitting lid is studded with computer-designed spikes that catch and release steam to self-baste the entire surface of the meal.
As handsome as it is hardworking, this vessel is fitted with a solid stainless-steel or brass finial that is generously sized for easy lifting and oven-safe to 600 degrees F. I purchased this pot a few months back and it is probably the best I own- and I have tried to buy quality kitchenware. It is the first pot I reach for when making my family's favorite pilaf, or any other rice dish for that matter. Rice turns out perfectly every time. It can't be beat for soups and stews or other dishes that need to cook slowly over a long period of time. I've never had anything burn or stick to this pan. Love the nubs on the lid that drop moisture back into the pot and it's stylish enough to place directly on the table (with a heavy pad or thick wooden board underneath it of course!) The only drawback (expected) is the weight, which gave me problems when I dislocated my shoulder, but hubby and sons gladly did the lifting for me until I could manage myself. If I ever had to get rid of all my other cookware and chose only 3 or 4 pans, I'd choose this one first.

Beautifully crafted dutch oven from France - on par with the Le Creuset cast iron pots but with a better, richer color and the self-basting lid. Matte black porcelain interior finish less likely to be marred by cooking and stirring. Overall an excellent value for a serious piece of cooking equipment.

Received this two days ago, arrived in perfect condition. Impressed with the quality, as many of the production steps are done by hand. Checked out several other retailers including SurLaTable, Nothing comes close to the price here. Eggplant is a discontinued color, that is probably why the price is so much less. Have the 1/2 qt in the same color, have no fear, it looks great!
